This is a rubust wholesome soup that has many deep flavours – delivering a delicious warming feeling. Perfect for the coming winter months. The addition of beetroot gives it a delightful twist.

Ingredients

Turnip
Parsnip
Swede
Carrot
Beetroot
Celeriac
Red onion
Leek
Garlic
Salt and Pepper
Homemade vegetable stock

How we make it

Dice and roast all the vegetables and the garlic in a sun-blush tomato oil.
Boil the sweet roasted pepper and vegetable stock for 15 mins. Blend to liquid.
Add the roasted vegetables to the liquid base.
Add cream and seasoning to taste.
Serve with chunky warm crusty bread.
